2 cups White Sugar
1 cup Water
Peels from Juiced Lemons
With a peeler, carefully peel all lemons that are to be juiced in a way that you avoid as much of their white pith as possible, set aside. In a medium saucepan combine sugar with water and place on medium high heat. Constantly stir to avoid burning the sugar. When sugar begins to dissolve into a liquid state, add your lemon peels. Continue stirring until all sugar has dissolved and it is no longer gritty. Do not let boil! Once all sugar is dissolved, cover with a lid, turn off heat and let cool for 10 minutes. Next, transfer to a heat proof container and refrigerate. Once fully cooled remove the lemon peels. Candied Lemon Peels are great for snacking, baking or garnishing any cocktail! Enjoy!
